Overnight Oats – Breakfast sensation in a jar!

I feel like I have been failing at the whole nutritious breakfast thing lately. It’s summer, it’s hot, we stay up too late and get up too late. I don’t want to be cooking in the morning and feel bad serving cold cereal every day. What to do? Ever been in this predicament?

Pinterest to the rescue! (as usual when I’m in a rut)  I tried making overnight oats during the school year and LOVED them, and then forgot about them. Why does that happen?? A friend of mine was talking about them a couple weeks ago so I decided to find some yummy looking recipes and try overnight oats once again.

Raspberry Almond Overnight Oats was the first recipe I tried. I made jars of oats for me and 5 of my kids, and pretty much everyone really liked it. My two youngest didn’t love it, but they liked it. The next day I did it again only with frozen blueberries. I liked this even better! The blueberries were sweeter than the raspberries and less seedy.

My personal preference is to use steel cut oats, because I like the texture better. But rolled oats is a close second, especially the thick cut ones.

The basic recipe for overnight oats is:  1/2 cup oats, 1/2 cup milk, 1 Tbsp chia seeds. You can leave out the chia, but I love it in there. So nutritious and I really like the thickness and texture it adds. I also like using almond or coconut milk, but you can use any kind you like.

You are going to want to add some sweetener as well. I like using honey, real maple syrup, or a few drops of stevia.  Agave would also be yummy.
